Hey there, dear reader. I hope you're safe and healthy. These past few months have been difficult for everyone, but we're all trying to cope with the "new normal" that was presented to us. As for me, I tried to be as productive and entertained as possible to keep myself sane. And part of that is cooking and baking.

It's important to be healthy especially during this pandemic. One of the best ways to do that is to eat healthily. And bananas are an excellent source of vitamins and minerals that help keep our immune system functioning well. That is why it's no surprise that everybody's baking banana bread

I, however, was unable to find the perfect size of the loaf pan for my oven, so I decided to bake banana muffins instead. I'm sharing this very easy and hassle-free recipe that I adapted from Taste of Home. I tweaked it a little to suit my taste, and you can do so if you want to.

Simple and Easy Banana Muffins Recipe

Ingredients:

1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
3 ripe bananas
1 large egg, room temperature
1/3 cup vegetable oil
1 teaspoon vanilla extract
1/8 cup walnuts (optional)

Preparation:

1. Combine all the dry ingredients in a large bowl.
2. In another bowl, mash the bananas well.
3. Add the egg, vegetable oil, and vanilla. Mix it well.



Directions:

    1. Stir into the dry ingredients until moistened.
    2. Fill greased or paper-lined muffin cups half full. (As for me, I use non-stick muffin pans so I opted to not use greasing or muffin caps anymore)
    3. Bake at 375° for about 20 minutes. If you like moist muffins, you can bake it up to 18 minutes only. (How to check if the muffin's ready: poke a muffin with a toothpick in the center. If it comes out clean, it's ready.)
    4. Remove from the oven. Cool it for 10 minutes, then remove from pan to a wire rack to cool completely.

Bonus: You can add chopped walnuts as toppings for your banana muffins for added texture.

Aaaand indulge! My parents really loved this recipe that I ended up baking banana muffins thrice in about a week. 😂
